Niigata Small Distillery Limited Liability Company is limited liability company established by Otani Co., Ltd which is a seal sales company. Three companies including Niigata Small Distillery announced craft whiskey production plans at the “Niigata Innovation Program” sponsored by Nomura Securities and it came true. The arrival of the equipment ordered from Scotland where the distillation equipment manufacturer is located, was delayed because of Covid-19 and production of whiskey was delayed. The purpose of making whiskey is to protect the local culture of Niigata and boost their brand recognition. They will make a light and aromatic whiskey. It seems that there are two types of unprocessed sake, one with peat and the other without peat.
