When Mr. Masataka Taketsuru, Nikka Whiskey founder, built the Yoichi Distillery, and he installed a pot still which used direct fire of coals. This still is same one to the pot still at Longmorne Distillery where Mr. Taketsuru first practiced in Scotland. This traditional coal-fired distiller is difficult to control temperature so it can’t seen often recently due to requires highly skilled craftsmen . However the distillation process in Yoichi has been following the traditional process even now. The toasty smell that characterizes Yoichi single malt whiskey is unique to this distillery.
