Ide Brewering is a long-established brewery since 1700s. Taking advantage of sake brewing know-how, it was started whiskey producing in July of 2020 by the Fuji Hokuroku Distillery. At the Fuji Hokuroku Distillery, it was introduced that not seen commonly yeast in whisky yeast that put sake yeast to wort, not whiskey or beer yeast in the alcoholic fermentation process. In addition, “the Grain Whisky Daijukai” which is blended grain whisky and malt whisky is released in November 2020, and mainly made by rices.
